Asparagus is another early spring vegetable that brings a lot of flavor to the table and is very simple to prepare. The most important thing to remember about this vegetable is that it is very tender and is easily overcooked. It is best when cooked just until tender and still slightly crisp.
Ingredients:
- 1 lb bacon
- 2 cups of cream cheese softened
- 1/4 teaspoon granulated garlic
- 4 pounds asparagus
- salt and pepper
Instructions:
Whip cream cheese, garlic, salt, and pepper with a mixer until smooth.
Lay two pieces of bacon out, put a couple of tablespoons of the cream cheese mixture on the bacon, spreading it out slightly. Place 3 pieces of asparagus in the middle and wrap the bacon and cream cheese around the asparagus so that the bacon covers most of the asparagus spears and only the tips are showing.
Place asparagus on a baking sheet and place in an oven preheated to 350 degrees. Bake for approximately 30 minutes or until the bacon is cooked and the asparagus is tender when pierced with a fork.
