This omelet is very fast and easy to make and a great way to serve a family. It can easily be doubled and put into a large 13×9 baking dish. Mix and match ingredients for your favorite combinations. Serve for breakfast or have breakfast for dinner, by serving with pancakes, biscuits, or toast.
Ingredients:
- 8 eggs
- 1/2 cup half and half
- 1 cup shredded cheese (your choice)
- 1 cup of diced ham
- 1/4 cup onion
- 1 Tbsp. oil
Instructions:
Sauté onion with one tablespoon of oil until translucent. Whisk eggs and half and half in a large mixing bowl. Added sautéed onions, ham, and cheese. Spray a 9 inch pan with cooking spray or coat with oil. Add egg mixture to the pan and bake in a preheated oven for 25 minutes or until golden brown. If desired add more shredded cheese to the top of the casserole in the last 5 minutes of the baking time. Serves 6.
Other variations include adding cooked bacon or sausage, or adding an assortment of vegetables. Peppers, mushrooms, asparagus, tomatoes (deseeded), and artichokes are all good options.
