Carefully fold in the walnuts and the milk chocolate and semisweet chocolate chips. Spray waffle iron with cooking spray and add 1/2 cup of batter to the center of the waffle iron. Cook for approximately 4 to 6 minutes or until cooked through.
To make the Ganache topping, add whipping cream and corn syrup to a pan and simmer carefully over medium heat. Add the last 3 ounces of chocolate chips and fold carefully with a rubber spatula. Add approximately 8 drops of red food coloring to get a deep red color.
To assemble waffles, place them on a place, top with whip cream, ganache and sprinkles.
