Spicy Chicken Buffalo Nachos

Super Bowl is just a few days away and many people are already planning their Super Bowl parties. If you are looking for something that is both traditional and a bit different this recipe may be just the thing.  A combination of two favorite party favorites these nachos are sure to satisfy everyone’s cravings for the greasy, heavy food that is so popular at these events.

Ingredients:

  • 1/2 cup Frank’s Red Hot
  • 1/4 cup barbecue sauce
  • 1/4 cup butter
  • 2lb rotisserie chicken
  • 1/2 of a 16 oz. bag of tortilla chips
  • 16 oz. of shredded cheese (can be a combination of cheddar, pepper jack, or any other cheese)
  • 1/2 cup crumbled blue cheese
  • Small can of sliced olives
  • 1 bunch of green onions sliced
  • Salsa
  • Sour Cream

Instructions:

Preheat oven to 400 degrees Fahrenheit. Prepare a cooking sheet with foil that has been oiled or sprayed with cooking spray.

For sauce combine Franks Red Hot, barbecue sauce, and butter in a pot over medium heat. Cook until the sauce is hot, thoroughly mixed, and butter is completely melted.

Cut chicken into small pieces and put in a large mixing bowl with the buffalo sauce. Mix well to thoroughly coat the chicken.

Layer the tortillas on the bottom of your prepared baking sheet and sprinkle half of the cheese over the top of them. Place chicken carefully and evenly over the top of the chips and cheese.

Mix the other half of the cheese with the blue cheese and put it evenly on top of the chicken. Sprinkle olives and onions on the top of the nachos.

Bake until the cheese is melted and starting to turn brown, approximately 10 or 15 minutes. Serve with sour cream and salsa on the side.
