Garlic Aioli Recipe

Ingredients:

  • 3 egg yolks
  • ½ teaspoon sea salt
  • ¼ teaspoon fresh ground pepper
  • 1 tablespoon white wine vinegar
  • 2 small garlic cloves
  • 1 cup olive oil, plus more if needed to reach smooth consistency

*other ingredients can be added such as roasted red peppers, basil, jalapeños, or cilantro for alternative flavors.

Instruction:

Add egg yolks, salt, pepper, vinegar, and garlic into food processor then blend.  With food processor still running, slowly thin stream in olive oil and blend until well incorporated, a little less or more may be needed in order to reach a smooth consistency.  The mixture may curdle when olive oil is added, if this happens, lightly break up one egg yolk in a clean and separate bowl then slowly add aioli mixture while stirring until
