Ginger, shrimp, snow peas, and couscous, it just doesn’t get any tastier or healthier. This dish is a blend of Mediterranean and Indian flavors that are sure to delight your family. Unlike many healthy dishes, all of the ingredients can be easily found in most grocery stores. It should take no more than 30 minutes to prepare and cook this delicious dish.
Ingredients
- 10 Oz. box couscous (should make 1 1/2 cups)
- 1 Lg. finely chopped yellow onion
- 1 C. white wine
- 1/3 C. cilantro chopped
- 3 cloves garlic finely chopped
- 1 Lb. peeled and deveined shrimp
- 8 Oz. snow peas that have been cut in half diagonally
- 3 T. ginger finely chopped
- 1 T. Extra virgin olive oil
- 1/2 Tsp. salt
- 1/4 Tsp. pepper
Cooking Instructions
Cook the couscous first, according to the instructions on the package. While this is happening, heat the olive oil in a large skillet over medium heat. Add the onion and sauté until it is golden brown in color. This should take approximately 10 to 12 minutes.
Add in the ginger and garlic and cook for another 2 minutes before adding the white wine and bring the entire mix to a boil. Place the shrimp gently in the mix and simmer for approximately 2 minutes.
Next add the snow peas and stir, cook the mixture until the shrimp are bright pink in color and cooked thoroughly. This should take approximately 2 more minutes. Then add the cilantro, salt, and pepper. Split the couscous into individual bowls and spoon the shrimp mixture over the top before serving.
