Oatmeal Casserole - Kitchen Chatters

Ingredients:

  • 2 cups rolled oats
  • 1/3 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ¼ cup chia seeds or ground flax seed (optional)
  • 1 cup (fresh or frozen) berries your choice
  • 1 cup chopped walnuts
  • 2 cups low-fat milk
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3 tablespoons melted butter
  • 1-2 bananas, sliced
  • 1-2 tablespoons pure honey

Instruction:

Preheat oven to 375F/190C.

In a larger bowl combine oats, brown sugar, baking powder, cinnamon, salt, half the amount of walnuts, and chia/ground flax seed if using.  Carefully mix in half of the berries.  In a separate bowl, whisk together milk, egg, melted butter, and vanilla.  Lightly spray a 10 x 7 inch baking dish and evenly spread oatmeal mixture in dish.  Top with the rest of the walnuts and berries then add sliced bananas.  Pour in liquid mixture, give a slight shake of the dish to evenly coat everything, place in oven and bake for 35-40 minutes.  Once removed from oven drizzle with honey.

(This is a very versatile casserole that can be accommodated for anyone’s taste buds or to tweek for any season.  For a seasonal Autumn dish use pumpkin, cinnamon, and nutmeg and leave out the berries.  In the summer use whatever fresh summer berries you have on hand.  For the kiddos add a cup of dark chocolate chips.  There are so many fun things to do with this bake!)
