Cocoa Bran Muffins - Kitchen Chatters

Here is a delicious healthy muffin recipe. You can enjoy these without having to feel guilty.


  • ¾ cup milk
  • ¼ cup canola oil
  • 1 egg
  • 1 cup Bran flour
  • ½ cup All-purpose flour
  • ½ cup whole wheat flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 3 tbsp cocoa powder
  • ½ cup brown sugar
  • ½ cup chocolate chips


Preheat oven to 190C/375F.

Mix flours, baking powder, salt, and cocoa powder in a large bowl.  In separate bowl combine milk, oil, egg and mix; then stir in sugar.  Next add wet ingredients in with the dry; stir well with spoon or spatula, but don’t overdo it.  Mix in chocolate chips.

Spoon muffin mixture into well-greased (with canola oil) muffin containers; place in oven and bake for 15-20 minutes, remove from oven and let muffins cool in tray.  Batter makes enough for 12 perfect muffins.
